Slightly concerned the french fries might burn after 30 mins at 230°c, but if man didn’t take risks, we’d never have made it to the moon. (Yes, i just equated putting french fries on focaccia to the moon landings 🤷‍♂️)

50% Plain AP flour
78% Mozzarella brine
2% Salt
2% Olive oil
20% Levain
