Moving house is a process full of mixed emotions. On one hand, it’s the start of an exciting new adventure 😃; it’s the first step towards a new location with the opportunity to explore and meet new people. On the other hand, it’s sad to leave the home where i lived last more than 6yrs. Moving stress is a natural result of all these emotions colliding. In fact, it often ranks in the top 3 of life’s biggest stressors alongside the death of a loved one and divorce.
Today is our final day to move to our new home and my last day in my current kitchen ☹️. So todays simple lunch bengali style kosha manso (Chicken curry)with aloo (potatoes).

1kg Chicken
2 large Onions, thinly sliced
2tsp Lemon/Lime juice
4medium Potatoes, halved or quartered
1tsp Ginger paste
1tsp Garlic paste
2tbsp Yogurt
1tsp Turmeric powder
1 tsp Cumin powder
1tsp Coriander powder
1tsp Kashmiri Red Chilli powder
1tsp Chilli powder
4pcs Green chillies (slit)
1tsp Salt
1/4tsp Sugar
3tbsp Mustard/White oil
1tsp Ghee
2dry Red chillies
2pcs bay leaves
3pcs Cardamom
3pcs Cloves
1pc Cinnamon
In a large mixing bowl first brine (salt water) the chicken for 2 hours, it will make chicken more moist (this step is optional). After 2 hours take out chickens from salty water and marinate with ginger garlic paste, red chilli powder, lemon/lime juice for 30-45 mins (don’t skip this step). Now put potatoes in a microwave-safe bowl, add 2 tbsp of water, cover the bowl with a cling film, and microwave for about 3 to 4 minutes. Heat oil and ghee in a pan on medium heat. When it has started to smoke lightly, temper it with dried red chillies, bay leaves, cardamom, cinnamon, cloves. Add onions, along with sugar until it turn brown in colour, then add yogurt, turmeric, cumin and coriander powder along with few tsp of water. Fry the spices until you see oil separating from the sides. Add marinated chicken along with the marinade. Cook the chicken for about 15 minutes, stirring occasionally. After 15mins add parboiled potatoes, slit chillies 2 cups of water. Cover the pan and let the curry cook for about 15 to 20 mins or until it cook (while cooking the chicken do not open the lid). Serve it hot with rice or roti.
